Happy birthday to the sweetest 2 year old I know!
And a quick birthday recipe:
The Recipe: Almond Flour Pancakes
What you need:
1 1/4 cup organic whole wheat flour
1/2 cup almond flour (we found ours at Trader Joe's)
1/2 cup (heaping) organic rolled oats
2 flax eggs (see recipe at bottom)
2 tsp baking powder
1 tsp honey
1 tbsp olive oil
1 tsp cinnamon
1 1/2 cup organic soy milk
Combine dry ingredients. Add flax eggs, honey, olive oil and soy milk until well combined. Spoon on griddle drizzled with olive oil. Cook on medium heat for 1 minute, then flip. Makes 3-4 servings (depending on who's eating them!). Top with blueberries, peanut butter or syrup. Yum!
Flax eggs: Whisk together 1 tbsp of organic ground flaxseed and 3 tbsp water for each egg. Allow mixture to sit for 5 minutes. It will become gel-like and work more like an egg.
