Today we went to visit our friends who have a new baby. She was born in December (while we were out of town) and we hadn't had a chance to see her, yet (what with the blizzards we have around these parts). What a beautiful little peanut! She's close to what Sweet P weighed at that age and I cannot remember her ever being that small. Why is that? I try and I try and I look at pictures and cannot remember it.
Sweet P when she was new.
Of course we took our little monster along so they could see what they have to look forward to in a few months. I have a HUGE bag of chocolate chips I need to get rid of (I bought it at Sam's thinking I'd make more Christmas candy then I did), so we also took some Chocolate Chip Cookies which is the purpose of this post. I thought I'd share the recipe with you. I found it in a cookbook, but modified it a bit so here it is. Trust me on the timing, I burnt the first 2 rounds (argh).
Eat More Cookies (Chocolate Chip)
2 C flour
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 C butter
1/4 C oil (I used to canola because I had it, otherwise I would have used olive)
1 C brown sugar
1/2 C sugar
1 1/2 C chocolate chips
Preheat oven to 375˚. Cream the butter, oil and sugars until fluffy. Add eggs and vanilla, beat well. Add dry ingredients and mix. Scoop with a spoon or cookie scoop (I used an ice cream scoop because I don't have a cookie scoop) onto baking sheets. Cook for 8-10 minutes (start at 8, if you need more time, add it). Enjoy!
They were so soft and yummy. So we took them a little over a dozen and kept the burnt ones here with us. And ate them tonight while watching The Biggest Loser. Yum.
